Ask any gardener what single habit makes the biggest difference and mulch is usually the answer. A good layer of mulch over garden beds holds soil moisture through Canterbury nor'westers, suppresses the weeds that would otherwise steal that moisture, buffers soil temperature and slowly feeds the soil as it breaks down.
What mulch actually does
Bark and wood chip suit ornamental beds and paths: they last well and look tidy. Straw and pea straw suit vegetable beds, breaking down faster and adding organic matter where hungry crops need it. Fallen leaves, shredded, make excellent free mulch for shrub borders. Avoid fine sawdust in thick layers, which can mat and repel water, and keep any mulch a few centimetres clear of plant stems and tree trunks to prevent rot.
Which mulch to use
Depth is where most people go wrong. Too thin and weeds push straight through; too thick and water struggles to reach the soil. Around five to eight centimetres over weeded, damp soil is the sweet spot for most beds. Lay mulch after rain or watering so you lock moisture in rather than sealing dryness underneath.
How deep, and where not to pile it
Top mulch up once or twice a year — autumn and spring are natural moments — and weed thoroughly first, because mulch over established weeds just hides them. Each refresh is also a good time to edge the beds, prune spent growth and step back to check the shape of the planting.
